Atatürk's Table and Culinary Philosophy
Nothing about Atatürk's table was accidental. Childhood habits carried from Salonika, the simplicity of his military years, and the symbolic politics of the young Republic shaped every choice he made.
Mustafa Kemal Atatürk was an exceptionally modest man when it came to food; yet he attached great importance to his table and to hospitality. Over time, the evening dinners at the Çankaya Presidential Residence grew into a stage for statecraft and the exchange of ideas — where he personally introduced his guests to the abundance of Anatolia and the refinements of Turkish cuisine.
The accounts of Halit Atay, a chef from Mengen, Bolu who served at the Çankaya Presidential Residence, form one of the principal first-hand testimonies concerning Atatürk's table habits. They are reported in Murat Bardakçı's Atatürk'ün Mutfağı (2022) and assessed alongside archive-based findings.
